P I Q U E T T E

A lightly fizzy, low alcohol beverage that sips like a hybrid of wine and seltzer.

Piquette is technically not wine since it’s not made from fermented grape juice. Instead, it’s made by adding water to grape pomace (the leftover pressed skins and seeds of conventionally-made wine) and fermenting what’s left of the sugars. The result is a fun, lightly fizzy and low alcohol beverage that sips like a hybrid of wine and seltzer.

Dry, Made from 2022 Riesling, 6% Alcohol
After the juice of our Riesling grapes was pressed, we transferred the pomace into a new vat and added water to it. Fermentation took place while the water extracted the remaining sugar, flavours and aromas from the grape skins. The pomace was in contact with water for about two weeks. Instead of going straight into bottles like some piquettes, we aged this one for six months in neutral barrels before racking it to a brite tank for a little carbonation. The extra time in the barrel allowed the heavy solids to settle and what remains is a beverage with a light haze like you might find in a craft beer.

Think strawberry, raspberry, soft white pepper, and a herbaceous streak
Off-Dry, Made from 2022 Pinot Noir, 6% Alcohol
This piquette was was made like the one above - the main difference is that we used Pinot Noir pomace for colour and flavour. This piquette settled almost clear in the barrel, so we decided to filter it and finish it up with a little residual sugar. Delicious!

Only 30 cases of each are available this year and we don’t expect them to last long. Available in store and on our website.
