A lightly fizzy, low alcohol beverage that sips like a hybrid of wine and seltzer.

Piquette is technically not wine since it’s not made from fermented grape juice. Instead, it’s made by adding water to grape pomace (the leftover pressed skins and seeds of conventionally-made wine) and fermenting what’s left of the sugars. The result is a fun, lightly fizzy and low alcohol beverage that sips like a hybrid of wine and seltzer.

After the juice was pressed from our Chardonnay, Pinot Gris and Riesling grapes, we transferred the grape skins, known as pomace, into a new vat and added water back to it. Fermentation took place while the water extracted the remaining sugar, flavour and aromas from the grape skins. Instead of going straight into bottles like some piquettes, we aged ours for about 6 months in neutral oak barrels. The time in barrel allowed the heavy solids to settle and what remains is a light haze like you might find in a craft beer.From there it was transferred into a pressure tank for a second fermentation, producing carbonation in much the same way as in our Charmat method sparkling wines.

How it tastes
Tropical aromas of pineapple and mango are featured in this lightly spritzy, refreshing summer drink. The low alcohol content is similar to beer or cider and offers an alternative for those looking to try something new. Drink while young and fresh.
